Okay so far I’ve posted about Day 1 HERE and about Race Morning and the Race HERE. So today’s post is about the rest of Sunday. A truly magical end to a truly magical weekend.
So once we got back to Polynesian after Heather’s fabulous monorail idea (PS today is Heather’s Birthday…go wish her a Happy one!) , it was shower and rest time. We were scheduled to see the Braves/Mets game at Disney’s Wide World of Sports around 1. Around 11:30 I started to not feel great again. I think all the dehydration followed by chugging water and the heat and humidity had just worn me down a bit. I was really bummed but I realized sitting in the sun (it was about 90 degrees) for the rest of the day wasn’t really the best idea. As much as I would have really liked to sit around for an extra few innings of the game, I took Lorraine’s advice and decided to chill out and hydrate. It was a definitely the less fun but smarter choice because after a bunch of water and a bit of sleep I was feeling good as new =)
I met back up with the ladies at the Grand Floridian where we were treated to a session about athletic nutrition by Disney’s Chef Gary (who just happens to be an Iron Man). Lisa and Heather were his wonderful helpers. We made Bircher Muesli, a Swiss Cereal with lots of great race healthy carbs, proteins, and vitamins. I’ll post the recipe at the bottom of this post if you’re interested (and it is very customizable to your own tastes).
The group had fun joking around about my…well…peculiar food tastes. As in I don’t like anything with flavor. After that we had a quick second to chill before dinner. And look who I found on the monorail!
It’s Courtney aka Run, Courtney, Run! Didn’t get to hang too long but it was great seeing you Court! That night we were treated so a wonderful dinner at the French Bistro in Epcot. I had an amazing Beef Tenderloin but the highlight was most definetly the wine and champagne ; )
We were then whisked away to our own private dessert reception on the lake at Epcot with the most amazing view of the Illuminations fireworks show! The reception was complete with chocolate shot classes, our own bartender, does of delicious desserts (including chocolate fondue) and just some $91 champagne! I told you they treated us like Princesses! A slight deviation from my typical college budget beverages.

After the fun with the fireworks we headed back to the hotel where we sadly had to say goodbye to some of your buddies including T who had a 5 am flight the next day (aka a 3 am shuttle ride). But me, Heather, Lorraine, Monique, and Christie headed out to the Magic Kingdom to take advantage of “Extra Magic Hours”.
We jumped on Space Mountain, Thunder Mountain, Pirates, and Haunted Mansion all within about an hour and a half and by the time the park closed we could barely keep our eyes open. It was hard to say goodbye to all the ladies and to such an amazing weekend but I am SOOOO blessed to have been a part of this amazing event. These ladies are all truly wonderful and Disney is obviously the most amazing place there is.
Birchermuesli (Swiss Cereal)
Servings: 10
Hints and serving suggestions:
- Instead of pears and apples, you may use any fresh fruit available at the market.
- Instead of whole milk, you may use buttermilk, whole or reduced fat milk, soy milk, almond milk, oat milk, goat milk, lactaid, rice milk or other to meet your individual needs.
- You may also use Kefir instead of yogurt.
- The choice of dried fruits and nuts is totally your preference.
- Each item can be modified to suit your individual taste. The Birchermuesli will last approximately 2 days in the refrigerator after which oxidation of the fruits may make the product darker in color and less visually appealing.
Ingredients
½qt. Oat Flakes (Raw Oatmeal)
1pt. Skim Milk
1cup Plain Low Fat Yogurt
½cup Dried Blueberries
½cup Walnuts, Chopped
½ea. Lemon, fresh squeezed juice
2ea. Apples
1ea. Pear
¼cup Brown Sugar
Method of Preparation
1. Soak the oat flakes in the milk and yogurt for about 15 minutes
2. Add the dried blueberries and the chopped nuts. Mix.
3. Squeeze and juice the lemon into the bowl and mix.
4. Shred the apples and pear and stir into the mixture.
5. Add the brown sugar and mix.
6. Taste and adjust to your own preference.

How cool that you bumped into Courtney. Disney is so huge – yet it seems you always run into people you know when you least expect it!
Good idea on skipping the baseball game. It was fun – I was there – but it was sooo hot. My one arm is still peeling from the sunburn I got that day!
